Ingredients

For 1–2 servings

  • 3 eggs
  • 2–3 tomatoes (ripe)
  • a little vegetable oil

Seasoning:

  • Salt (to taste)
  • ½ tsp sugar (optional, balances acidity)
  • ½–1 tsp light soy sauce (optional)

Step by Step

STEP 1
Crack eggs into a bowl, lightly salt, and whisk well.

STEP 2
Heat a pan and add some oil. Let the eggs set loosely over medium heat, then remove from the pan and set aside.

STEP 3
Wash tomatoes and roughly dice them. Optionally, remove the skin beforehand.

STEP 4
Add a little oil to the pan. Sauté tomatoes over medium heat until they soften and release their juice.

STEP 5
Return eggs to the pan. Season with salt, optional sugar, and soy sauce. Gently mix everything and heat for 30–60 seconds.
