Fish sauce is considered one of the basic ingredients in Asian cuisine. It is made from fresh anchovies (other species of fish are sometimes added) and sea salt, which are placed in wooden barrels and fermented for several months. It has a specific taste that is typical of Southeast and East Asian dishes and also gives the dish a salty note. Three Crabs' Vietnamese fish sauce is made from freshly caught anchovies that are marinated in salt. The natural fermentation creates an amber-colored liquid. Fish sauces are an ideal seasoning for soups, especially pho soups, but also for fried foods or for preparing sauces.
