Rezept für Soufflé pancakes

Ingredients

For 3 pancakes

  • 2 eggs
  • 2 Table spoons of milk
  • 30 g wheat flour
  • 0.5 tsp baking powder
  • 2 tbsp sugar
  • some neutral oil for the pan
  • some water for the pan

step by step

STEP 1
Separate the eggs and place the container with the egg whites in the freezer for 10-15 minutes

STEP 2
Meanwhile, whisk together the egg yolks and milk in a mixing bowl

STEP 3
Add flour and baking powder and stir until smooth

STEP 4
Beat the egg whites with a mixer on low speed. As soon as the egg white becomes slightly firm, gradually add the sugar. Finally, beat at a higher speed until the egg whites are firm but still creamy and shiny

STEP 5
Then carefully fold the egg white into the remaining dough

STEP 6
Preheat a non-stick pan with a little oil, then add about 1 spoonful of batter per pancake to the pan and reduce the heat to the lowest setting and place a lid on the pan

STEP 7
After about 30 seconds, add another spoonful of batter to the top of all pancakes, pour a splash of water into the pan, put the lid on and continue frying for about 4-5 minutes

STEP 8
Then carefully turn the pancakes over, add a little more water if necessary and fry on this side for 4-5 minutes

STEP 9
You can now enjoy the pancakes with the toppings of your choice. Bon appetit!
