Rezept für Nian Gao


Ingredients

For 1 cake

  • 350g water
  • 350g brown sugar
  • 225 g coconut milk
  • 450 g glutinous rice flour
  • 1 pinch of salt
  • 1 tsp neutral oil
  • Optionally some orange peel and fresh ginger
  • 1 date

step by step

STEP 1
Bring water to the boil in a pot and, if desired, add orange peel and ginger in pieces and simmer for a few minutes

STEP 2
Then stir brown sugar into the boiling water and bring to the boil to form a sugar syrup

STEP 3
Set the pot aside to cool and stir the coconut milk into the sugar syrup

STEP 4
While the syrup is cooling, add glutinous rice flour, salt and neutral oil to a large mixing bowl

STEP 5
Then pour in the sugar syrup through a fine sieve

STEP 6
Mix everything well until there are no more lumps and the dough has a thick consistency

STEP 7
Either brush a cake pan with neutral oil or line it with pandan or banana leaves and pour the dough into it

STEP 8
Then cook the cake in a bamboo steamer for about an hour

STEP 9

Use a chopstick in the middle of the Nian Gao to test whether the cake is already cooked and then decorate this hole with a date

Nian Gao can be eaten fresh in this form or stored for a few days and then cut into rectangles and fried in oil
